melbourne’s alejandro saravia top open latin-american fine dining restaurant in sydney.

Alejandro Saravia, the Executive Chef and owner of Melbourne’s hatted restaurant Farmer’s Daughters and sister venue Victoria by Farmer’s Daughters in Fed Square, has today announced his expansion back to Sydney - where it all began for him in Australia. Saravia will open the 220-seat restaurant this November in Sydney’s CBD which will see him return to his Latin-American roots.

Morena, will reside within the historic GPO building at 1 Martin Place and will hero Latin-American cuisines. The menu will include dishes from Saravia’s native Peru as well as from Cuba, Mexico, Venezuela, Argentina and Brazil. The beverage options will have a heavy emphasis on Spanish and South American wines as well as signature cocktails representative of Latin American spirits. 

True to his philosophy of working directly with farmers, suppliers and producers, Morena will continue to source seasonal produce from across Australia, and will also work with authentic ingredients from across Latin America to stay true to the true flavours of those cuisines. 

Alejandro Saravia is widely credited with introducing Peruvian cuisine to the Australian market and has been sharing this passion across the country through various restaurants since 2006.

Of the new venture Saravia said, “I am so excited to open Morena in the heart of Sydney. With this new venue we will be elevating the way Sydneysiders engage with the diverse cuisines from across Latin-American cultures.”  

He continues “For me, opening Morena represents the culmination of over 15 years of working to shine a light on the unique flavours and hospitality of Latin America. We aim to transform Australians’ perspective of Latin-American cuisines, showcasing the diverse culinary heritage beyond just street food, all while preserving the rich cultural roots and authentic flavours that define it.” 

Morena Sydney is set to open at 1 Martin Place in November 2023.
